Green Bean Salad

Ingredients

  • 3 slices bacon
  • 1/4 cup sweet onion, minced
  • 2 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons soy sauce
  • 1 pound leftover green beans
  • salt and pepper to taste

Directions

  1. 1. Dice and cook bacon in a skillet over medium-high heat until crispy.
  2. 2. Remove bacon from the skillet and set aside to cool.
  3. 3. Add onion to the bacon fat and sauté for about 1 minute.
  4. 4. Add brown sugar, vinegar, Dijon, and soy sauce to the pan and stir to mix.
  5. 5. Add cooked green beans and toss to coat.
  6. 6. Cook for 1-2 minutes more and remove from heat.
  7. 7. Crumble bacon over the top and serve.
