How to Store Eggplant

Wrap
Wrap uncut, unwashed eggplant in a dry paper towel.

Seal
Seal in an open GladWare® food protection container or open Glad® Zipper Bag.

Refrigerate
Store in the coldest part of the refrigerator.

How to Freeze Eggplant

Boil
Bring a large pot of water to a boil, and stir in 1/2 cup lemon juice.

Blanch
Peel and cut eggplant into 1/2 inch-thick slices. Blanch in boiling water for 2 mins, then plunge into ice water for 2 mins.

Pack
Dry, then pack eggplant in a Freezer Zipper bag and seal.

Freeze
Remove as much air as possible from bags. Place in the deepest part of the freezer.
