Recipe yields about 18 cookies
Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup butter, room temperature
3/4 + 1/2 cup peanut butter
3/4 cup sugar
3/4 cup light brown sugar
2 eggs
1 teaspoon vanilla extract
Ingredient Notes
- Preheat the oven to 350 degrees F.
- In a medium bowl, stir together the flour, baking powder, baking soda, and salt.
- In a mixer, using the paddle attachment, mix together the butter, both sugars, and the 3/4 cup of peanut butter until light and fluffy. Mix in the eggs and the vanilla.
- Gradually, mix in the dry ingredients until fully incorporated.
- Portion golf ball size balls of dough and place them on a baking sheet lined with parchment paper or a silicon baking mat. Flatten the cookies using the palm of the hand.
- Bake in the oven for 10-12 minute or until just starting to color around edges. Remove from oven and cool completely. Top each cookie with peanut butter and enjoy.
