Stephan Pyles’ Peanut Butter Cookies
Recipe yields about 18 cookies

Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup butter, room temperature
3/4 + 1/2 cup peanut butter
3/4 cup sugar
3/4 cup light brown sugar
2 eggs
1 teaspoon vanilla extract

Ingredient Notes
  1. Preheat the oven to 350 degrees F.
  2. In a medium bowl, stir together the flour, baking powder, baking soda, and salt.
  3. In a mixer, using the paddle attachment, mix together the butter, both sugars, and the 3/4 cup of peanut butter until light and fluffy. Mix in the eggs and the vanilla.
  4. Gradually, mix in the dry ingredients until fully incorporated.
  5. Portion golf ball size balls of dough and place them on a baking sheet lined with parchment paper or a silicon baking mat. Flatten the cookies using the palm of the hand.
  6. Bake in the oven for 10-12 minute or until just starting to color around edges. Remove from oven and cool completely. Top each cookie with peanut butter and enjoy.
