Bread Winners Café and Bakery’s Chocolate
Coconut Oatmeal Cookies
Recipe yields three dozen cookies
Ingredients
1 cup butter
1 cup cocoa powder
4 cup sugar
1 cup milk
3 ounces Kahlua
1 cup pecans, chopped
1 cup sweetened flaked coconut
2 teaspoons vanilla
6 cups oatmeal
Ingredient Notes
- Preheat oven to 325 degrees F.
- In a saucepan, combine butter, cocoa, sugar, milk and Kahlua.
- Bring mixture to a boil and continue to boil for three minutes.
- Remove from heat and fold in remaining ingredients.
- Immediately scoop by the teaspoonful onto parchment lined cookie sheets and place cookies two inches apart.
- Bake for approximately 18-20 minutes.
- Remove from the cookie sheet and cool.
