Beth Welch’s Extra Crisp Sugar Cookies
Ingredients

Cookies

1 cup butter
2 cups sugar
2 eggs
1 cup vegetable oil
1/4 teaspoon salt
1 teaspoon vanilla extract
5 cups flour
2 teaspoon baking soda
2 teaspoon

Frosting
1 cup butter
2 cups confectionary sugar
1 teaspoon vanilla extract
Milk

Ingredient Notes
  1. Preheat oven to 350 degrees F.
  2. Cream well the butter, sugar and eggs in a bowl.
  3. Add the vegetable oil, salt, and vanilla.
  4. Sift and add the flour, baking soda and cream of tartar (a splash of milk will help get batter to a spreading consistency).
  5. Roll dough into a small ball and flatten on sheet with either a fork or fingers.
  6. Sprinkle with sugar, then bake for about 10 minutes (time varies). Set on a wire rack to cool.
  7. To make the frosting, cream together the butter, sugar, vanilla and a splash of milk in a bowl. Spread across the top of each cooled cookie.
